Syrah, Grenache and Counoise are the main grapes used," explains Lorraine Oddo, winemaker at Domaine du Vallon des Glauges in the Alpilles mountains. "

  • AND WHAT DO YOU DRINK WITH IT? - àcroquer Magazine - Charlotte Gulgnand - 06/28/2023

"When we talk about frying in general, we think of crispiness first, then salt, which would be more the friend of wine, then fat. The wine that accompanies your fritters will have a role to play: dissolve the sensation of fat in your mouth, and highlight the fritter's filling. Choose a fresh, crisp white wine for vegetable, white meat or fish fritters. If the fritters are spicy
or accompanied by spicy sauces, step up your game by opting for rosé, which will add a little fruitiness. Be wary of red wine
as it is greasy, and the spices and tannins could flop.

  • Pampres et papilles - VSD Magazine - Marie Grézard - 06/30/2023

"Wine and gastronomy are inseparable. The Oddo family, owners of several wine estates in France and abroad, has published a book of recipes, specialties and culinary creations from their chosen terroirs. When Pascal and his daughter Lorraine visited Domaine du Vallon des Glauges, in the Coteaux d'Aix, it was love at first sight. Seventy-five hectares nestled in a delightful hillside, where vines and olive trees flourish. The estate primarily produces rosés, but also whites and reds, historic pillars of Provencal culture. Other estates will follow, such as Sancerre, where their grapes and wines are vinified by the well-known Pascal and Clément Jolivet. And then further afield: Sicily, South Africa in the Stellenbosch region, Spain in Rioja Alavesa. A large family united by a concern for excellence and a hedonistic art of living. Following in their footsteps as globetrotting owners, we are invited to their tables, thanks to this beautiful book, freshly translated into French and just awarded the title of Best International Book 2023 by the Gourmand World Cookbook Awards.
