"The neighbors of Provence. Among other highly regarded rosés are those from Provence. “While their color is often lighter than that of Languedoc wines, they nevertheless offer a beautiful aromatic palette, with lightness and freshness, and they pair perfectly with fish. Syrah, Grenache, and Counoise are the primary grape varieties used,” explains Lorraine Oddo, a winemaker at Domaine du Vallon des Glauges, located in the Alpilles mountain range. “

- AND WHAT DO YOU DRINK WITH IT? - àcroquer Magazine - Charlotte Gulgnand - 06/28/2023
"When we talk about fried foods in general, we first think of crispiness, then of salt—which tends to pair well with wine—and finally of the oiliness. The wine you choose to pair with your fritters will play a key role: it will cut through the greasiness in your mouth and highlight the filling inside the fritter. So opt for a fresh, lively white wine to pair with vegetable, white meat, or fish fritters. If the fritters are spicy
or served with bold sauces, step it up a notch by opting for a rosé, which will add a touch of fruitiness. Be cautious with red wine
because it’s rich, and the spices and tannins could clash.

"Wine and fine dining go hand in hand. The Oddo family, owners of several vineyards in France and abroad, has published a cookbook featuring recipes, specialties, and culinary creations from their favorite regions. When Pascal and his daughter Lorraine visited the Domaine du Vallon des Glauges in the Coteaux d’Aix region, it was love at first sight. Seventy-five hectares nestled in a delightful hillside hollow, where vines and olive trees thrive. The estate primarily produces rosés, but also whites and reds—the historic pillars of Provençal culture. Other estates will follow, such as Sancerre, where their grapes and wines are vinified by the well-known Pascal and Clément Jolivet. And then, further afield: in Sicily, in South Africa’s Stellenbosch region, and in Spain’s Rioja Alavesa. A large family united by a commitment to excellence and a hedonistic art of living. Following in the footsteps of these globetrotting owners, we are invited to their tables, thanks to this beautiful book, freshly translated into French and rightly awarded the title of Best International Book 2023 by the Gourmand World Cookbook Awards. “
